Seafood Pasta Recipe






INGREDIENTS:
- 12 oz (340g) pasta (spaghetti, linguine, or your choice)
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup tomato sauce
- 1/2 cup white wine (optional)
- 1 tsp sugar (to balance acidity)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 lb (450g) mixed seafood (shrimp, scallops, mussels, and squid)
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)



INSTRUCTIONS:

1. **Cook the Pasta:**
   - Cook pasta according to package instructions until al dente. Drain and set aside.

2. **Prepare the Sauce:**
   - In a large skillet or saucepan, heat olive oil over medium heat.
   - Add chopped onion and cook until translucent, about 5 minutes.
   - Add minced garlic and cook for another 1-2 minutes until fragrant.

3. **Make the Tomato Sauce:**
   - Add diced tomatoes, tomato sauce, white wine (if using), sugar, oregano, and basil to the pan.
   - Stir to combine and bring the mixture to a simmer.
   - Season with salt and pepper to taste.
   - Let the sauce simmer for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.

4. **Cook the Seafood:**
   - Add the mixed seafood to the sauce.
   - Cover and cook for about 5-7 minutes, or until the seafood is cooked through and the mussels have opened. Discard any mussels that do not open.

5. **Combine and Serve:**
   - Add the cooked pasta to the skillet with the seafood and tomato sauce.
   - Toss everything together until the pasta is well coated with the sauce.
   - Cook for an additional 2-3 minutes to heat the pasta through.

6. **Garnish and Enjoy:**
   - Serve the seafood pasta hot, garnished with fresh parsley and grated Parmesan cheese if desired.
