INGREDIENTS:
• 4 boneless, skinless chicken breasts
• Salt and pepper to taste
• 2 tablespoons olive oil
• 1 cup sliced mushrooms
• 2 cloves garlic, minced
• 1/2 cup chicken broth
• 1/2 cup heavy cream
• 1/4 cup grated Parmesan cheese
• 1 teaspoon dried thyme (or other herbs of your choice)
• Chopped fresh parsley for garnish
Instructions:
• Season the chicken breasts with salt and pepper.
• In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.
• In the same skillet, add the sliced mushrooms and sauté until they are browned and tender.
• Add the minced garlic and sauté for another 30 seconds until fragrant.
• Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
• Stir in the grated Parmesan cheese and dried thyme. Allow the sauce to thicken slightly.
• Return the cooked chicken breasts to the skillet and let them simmer in the sauce for a couple of minutes to absorb the flavors.
• Garnish with chopped fresh parsley before serving.
Serve the Chicken Alexander over cooked pasta, rice, or mashed potatoes, and enjoy your flavorful meal!
