INGREDIENTS
FOR GNOCCHI
5 to 6 pcs of potato
300 g of all purpose flour and additional for dusting
1 egg
1/2 tsp of salt
FOR THE SAUCE
5 tbsp olive oil
1 carrot cut into small cubes
1 onion finely chopped
1/2 tsp pepper
Salt to taste
350 mk of tomato sauce / italian style pasta sauce
METHOD
FOR THE SAUCE
1. Heat oil in a pan and saute the onion and carrots for about 2 minutes.
2. Add the pasta sauce of your choice stir well and let it simmer for about 3 minutes and add pepper and salt to taste simmer for another 2 minutes.
FOR THE GNOCCHI
1. Peel the skin of the potatoes and cut into 4 pieces.
2. Wash and boil for about 10 minutes or until soft.
3. Mashed the potatoes using a fort or a potato masher.
4. Set aside.
5. In a clean surface combine the mashed potato and egg . Mix well
6. Add the half of the flour then mix well then the other half. Continue kneading it until it's well combine and form like a dough like and the texture is soft but mot sticky.
7.In a floured surface cut small amount of dough to form a rope then cut into smaller pieces about 2cm then slice it using a fork or a knife .
8. Sprinkle a little bit of flour on top and toss so they don't stick together.
COOKING GNOCCHI
1. In a large pot boil 1 to 2 litre of water add salt and a bit of oil. When the water started to boil put in the gnocchi. Gnocchi is ready when they float on top.
2. Drain well and add the cooked sauce and mix well. Serve with grated parmesan cheese and herbs.
