INGREDIENTS
350 g plain flour
2 tsp baking powder
1/2 tsp turmeric powder
1/2 cup cornflour
Salt
Pepper
200 ml cold 7 up or sprite
300 ml cold soda water
4 pcs firm white fish( snapper, tilapia or cod fish) put in fridge until ready to cook
Oil for frying
FOR THE POTATO WEDGES
3 pcs potato cut into wedges
1 tsp paprika
1/2 tsp dried oregano
salt
Pepper
1/2 tsp garlic powder
1/2 cup cornflour
METHOD
1. Seasoned fish with salt and pepper then keep aside put in fridge until ready to cook.
2. In a big bowl put the potato wedges then mix all the ingredients set aside for 5 minutes.
3. In a pan heat the oil and fry the potato wedges until golden brown. Set aside.
4. In a big bowl make the batter. Mix together the flour,baking powder,salt,pepper,turmeric,soda water and 7 up. Stir well to be well combined. This time the batter must be lightly thick .
5. In a frying pan heat the oil. Fry the fish until it turns crispy and golden brown. Dry the 3xcess oil with paper towel. Serve with the potato wedges and lemon.
