INGREDIENTS
230 g sugar combination of white and light brown sugar
4 large eggs
250 g butter (SCS) or any good quality butter
250 g all purpose flour
2 tsp vanilla
6 tbsp UHT milk
2 tsp baking powder
1 cup dried mixed fruits

METHOD
1. Line a cake pan 8" in diameter or a y cake pan u desired .
2. In a mixing bowl beat the butter and sugar until smooth and fluffy.
3. Add the egg one at a time,alternating with the four. Mix the vanilla to the milk and add in.
4. Check the consistency of the batter it must be a dropping consistency.
5. If the batter peaking and hard add some more milk. Lastly add the mixed dried fruits stir well. Bake for 40 minutes.
