Moroccan Meatballs with Pearl Cous Cous Salad Recipe




INGREDIENTS 
500g minced lamb or beef
3/4 cup panko bread crumbs
1 tsp cumin powder
1 tsp onion powder
1/2 tsp pepper
1/2 tsp garlic powder
1 egg
Oil

SALAD
1 1/2 cup pearl cous cous
2 cups of water
Salt
3 tbsp butter
Broccoli 
Carrot sliced

DRESSING
3 tbsp olive oil
4 tbsp balsamic vinegar
1 tsp sugar 

METHOD
1. Combine all the ingredients for the meat balls. Mix well to be well combine and form it into a ball. Set a side.

2. Pan fry the meatballs 2 minutes each side or until become golden brown. U can grill also the meatballs it depends on your preference. Set aside.

3. In a boiling water put the broccoli for 3 minutes then soak it on a cold water then drain.

4. Cook the cous cous in boiling water with butter let it simmer in medium heat then cover cook for 13 to 15 minutes.

5. In a small bowl combine the ingredients for the dressing

6.in a large mixing bowl combine the cous cous,broccoli, pour in the dressing and toss to mix well. Add the meatballs. Garnish with coriander.
