Squid can be prepared in different ways, can be grilled, baked, fried, roasted. In this recipe squid are stuffed before roasting.
INGREDIENTS
3-4 pcs of squid
2 tomatoes cut into cubes
1 onion finely chopped
3 cloves garlic minced
1 bell pepper cut in cubes
Pepper
Fish sauce
Toothpick
3 tbsp light soy sauce
3 tbsp lime juice
250 g minced chicken
FOR THE SAUCE
3/4 cup soy sauce
4 tbsp lime juice
1 red chilli
1 green chilli
1/2 tsp sugar
JUST MIX ALL TOGETHER
METHOD
1. Wash and clean the squid.remove the head and cut the tentacle of the squid and cut into small pieces.
2. Marinate the squid in soy sauce and lime juice season with pepper. Set aside.
3. In a pan heat the oil and saute the garlic and onion for 2 minutes then add in the tomato and squid tentacle stir and saute for 3 minutes. Add in the minced chicken stir pour in the fish sauce saute for 3minutes. Add the bell pepper season with pepper and stir saute for 5 to 6 minutes.
4. Transfer to a bowl and set cool down and set aside.
5. Remove the squid from the marinade and scoop mixture and put in inside the squid cavity. Close with toothpick.
6. Roast for 15 minutes or grill each side for 6 minutes.
