Biryani/briyani is aromatic rice dish that is well known in India. You can serve it with different kinds of curry depends on your preference. It is good well also with any vegetarian curry or dal.
INGREDIENTS
2 cups basmati rice
3 cups chicken stock/ water
3 tbsp ghee or oil
1/2 tbsp turmeric powder
1 bay leaf
2 pcs cinnamon stick
2-3 pcs cloves
3 pcs cardamoms
1 tbsp ginger garlic paste
2 tomatoes sliced
1 tsp cumin powder
1 tsp garam masala
Coriander leaves to garnish
3 shallots sliced and fried
Salt to taste
Chilli powder optional
METHOD
1. Wash the basmati rice few times then soak in water for 20 minutes. Drain then set aside.
2. Make a ginger garlic paste..2 gloves garlic and 1 thumb ginger pound in a mortal and pestle.
3. In a pan heat the oil or ghee then saute the ginger garlic paste in few minutes then add the spices stir well until fragrant . Add the tomatoes stir and cook until tomatoes goes mashy then pour in the chicken stock stir bring to boil and then add the basmati rice.Stir well and cook until the rice is fully done 5 to 6 minutes.
4. Transfer to a plate and garnish with coriander leaves and fried onion.
