INGREDIENTS
2 cups basmati rice
3 cups chicken stock/ water
3 tbsp ghee or oil
1/2 tbsp turmeric powder
1 bay leaf
2 pcs cinnamon stick
2-3 pcs cloves
3 pcs cardamoms
1 tbsp ginger garlic paste
2 tomatoes sliced
1 tsp cumin powder
1 tsp garam masala
Coriander leaves to garnish
3 shallots sliced and fried
Salt to taste
Chilli powder optional
1 1/2 cups mix veggies
Cashew nuts optional
METHOD
1. Wash the basmati rice few times then soak in water for 20 minutes. Drain then set aside.
2. Make a ginger garlic paste..2 gloves garlic and 1 thumb ginger pound in a mortal and pestle.
3. In a pan heat the oil or ghee then saute the ginger garlic paste in few minutes then add the spices stir well until fragrant . Add the tomatoes stir and cook until tomatoes goes mashy then pour in the chicken stock stir bring to boil and then add the basmati rice. Cook for 10 minutes then add in the mix veggies on top. Cover and cook for 15 minutes. Garnish with friend onion.
