Inspired by a friend to make this authentic moroccan Chicken Tangine recipe..I really like this recipe because its hearty and rich of different flavours of spices.Serve this with couscous for best excotic taste.😊
INGREDIENTS
2 pcs tomatoes chopped
3-4 pcs chicken
1 onion chopped
3 cloves of garlic
1 tsp of cinnamon powder
2 tbsp olive oil
2 tsp ground coriander
3 tsp ground cumin
200 g chicken stock
1 preserve lemon
2 slice of fresh ginger finely chopped
Fresh coriander leaves to garnish (optional)
1 tsp salt
1 tsp black pepper
METHODS
* Clean and skin the chicken then wash and season with salt.
* In a pot heat the olive oil and saute the onion and garlic until the onion is soften.
* Add in the chicken and cook for about 5mins or until the chicken is seared then add the tomatoes and ginger.
* Pour in all the ground spices stir then add in the chicken stock stirring it contiounsly then cover and simmer in medium.heat for about 20 mins then add in the preserved lemon simmer for another 15mins.
* Season with salt and pepper
