INGREDIENTS
3-4 pcs whole chicken thigh
4 cloves of garlic minced
2 stalks of lemon grass finely chopped
1/4 cup brown sugar
2 tbsp salt
1 tbsp of black ground pepper
1 thumb ginger peeled finely chopped
14pcs calamsi (juiced)
1 cup vinegar
BASTING SAUCE
5 tbsp of butter or margarine
1/4 tsp salt
1 tsp calamansi juice
METHODS
* Wash and clean the chicken and pat dry with paper towel then set aside
* in a big bowl combine all the ingredients for marinade
* Place the chicken in a ziplock plastic and pour in the marinade with the chicken and sealed
* marinate it for 2hrs or overnight for better taste
* Take out from the fridge if ready to cook
*prepare the basting sauce by mixing all the ingredients. Grill the chicken for about 20mins or until well done and keep on basting the chicken with the sauce.
